"Cathy, thanks for all you are doing to help spread the word about dietary sanity. Please keep sharing the life-saving message about plant-based nutrition."
"Chef Cathy is SO knowledgable and a really great chef! She is an excellent teacher and shows that eating healthy is not only possible, but much easier than you think, very budget-friendly, and most importantly, tasty! I am a Naturopathic Doctor, and she taught a class for our patients, and she absolutely exceeded our expectations. Our patients had such a great experience. If you are looking to learn more about plant-based cooking, then look no further! Chef Cathy will help you on your path to optimal health."
"Yours and your husband’s story of success can surely be an inspiration to so many who are wandering in the dark, unaware of a safe, simple and enduring treatment which can vanquish their disease. Keep up the wonderful work. You are a kindred spirit."
"... I just returned from the nephrologist (who) was, in his words, shocked to see the level of improvement, especially in somebody who was close to red-lining. He’s never seen that before, but he may not have had any patients that changed eating habits as carefully as I have...You are the person most directly responsible for making this happen, so I am in your debt and cannot thank you enough." Westport, CT
"I wanted to say thank you for the lesson. I really enjoyed the evening. Your knowledge of nutrition and cooking vegan food was so impressive and sharing this in such an accepting and encouraging way made it such a wonderful experience!.... I’m looking forward to more inspiring lessons!" Tina T.
"So many folks have hung up their aprons for the convenience of prepared, processed foods, eating out and taking out. Opting for convenience carries risks: to our social bonds around the family table, to our creativity in the kitchen, to our health. Processed and restaurant foods are far higher in fat, protein, salt and sugar than home-cooking, raising our risks for weight gain and chronic diseases.
Instead, mine the depths of your own inner chef. Discover the joys of cooking with plants, wake up your senses and reclaim your health."
" This way of eating...is the ideal diet to reduce systemic inflammation...the root cause of so many diseases, including atherosclerosis, cancer, and many others....What we often are confronted with when we are trying to eat well...is not having the proper tools, not knowing how to shop for certain foods, how to prepare them the proper way or even how to make them taste good. And this is where Cathy can really help us....She will be invaluable to our patients...."
"I'm thrilled that Cathy has joined our team at Matrix Personalized Medicine in New Canaan. She represents the very best example of the essential missing component in healthcare today -- we truly are what we eat. Cathy, with her depth of knowledge and culinary skills, is at the cutting edge of Lifestyle Medicine. My patients will surely benefit from her wisdom and instruction (as have I). Welcome aboard, Cathy!"
"Cathy is amazing and knowledgeable, I totally support her."
H. Robert Silverstein, M.D., Medical director of the Preventive Medicine Center, Hartford, CT. Maximum Healing: Optimize Your Natural Ability to Heal (2010)
"I've really enjoyed the cooking demos. What has been most valuable for me (even beyond the recipes) has been the techniques and all the information that you share with us during the classes." Christie N.
A few years back my family went through a harrowing medical
crisis which set me on a new course. I discovered 50 years of
nutritional research and clinical evidence supporting a diet based on whole plant foods to best treat - and many times reverse - our most pervasive and debilitating chronic degenerative diseases.
Like many others who have undertaken similar dietary changes,
the results for my family have been spectacular and we have
never looked back.
My mission is:
to educate others about the powerful health impacts from eating a plant-based, nutrient-rich diet that is low in fat
to guide them as they transition to a plant-based lifestyle
to empower them to stretch their culinary horizons in delicious, health-promoting ways and learn some new tricks in the kitchen.
to support families by providing super healthful vegan meals, adapted to their medical needs and lifestyle goals
There are so many scrumptious avenues to explore!

"I have thoroughly enjoyed my first two classes. A wonderful warm home setting with wonderful people. Extremely informative, healthy, meals & new to me, plant based anti-inflammatory way of cooking & much, much more. Thank you Cathy." Sheila H.
"Thank you, Cathy, for your efforts to promote the life-changing message of plant-based nutrition. We also value your contributions to PlantPure Nation, including your help in organizing a local screening of our film. We will be working in towns and cities across the country to launch community-wide campaigns around this health message, and look forward to working with you to do the same in Ridgefield."
"Most of us are blithely unaware and indifferent to diet until we get sick.
I want to help you prevent illness from occurring in the first place, but if it does, to guide you to the road to recovery with whole plant foods."
