It all started with the beans. I ordered some tarbais white beans and this evoked an image of cassoulet in my mind. But all the cholesterol and saturated fat in traditional cassoulet makes my arteries ache, so I devised a plant-based alternative. Incorporating an aromatic mix of French vegetables, herbs, spices and the beans, it’s slowly baked until it grows creamy and melts in your mouth. The aroma alone is heavenly!
