Asparagus Sheaves in Tomato Baskets make a pretty appetizer and side dish that can take center stage as an entrée if you serve it atop a whole grain pilaf or simple risotto.
The asparagus stalks are blanched to keep them bright and just tooth-tender. The tomatoes are baked in a tasty chickpea dough, artfully encapsulating the tomatoes to add interest and structure. The sheaves are “planted” in a bed of seasoned black bean purée. Wholly plant-based with no oils-salt-sugar-gluten-dairy. What’s not to like?
